Taste of the Holidays



We sampled this recipe at a recent event at Whole Foods West Vancouver...It was a hit!


Festive Kalamata Tapenade on Crostini with Organic Pomegranate and Flat Leaf Parsley

A easy appetizer and staple for the holiday entertaining season.

1 baguette, sliced into ¼” thick pieces
1/2 cup Golden Olive Eleni certified organic olive oil
1 tbsp olive oil
2 X 140g Golden Olive Vassiliki Kalamata tapenade japs
1 large organic pomegranate, cleaned
1/4 cup flat leaf parsley, chopped
Brush bread slices generously with olive oil. Place on a baking sheet and bake at 400F for 3 minutes on each side. Remove from oven and let cool. (This can be done a couple of days beforehand as well.)

Add 1 tbsp olive oil to the tapenade, blend well and spread mixture over the cooled crostini. Top with pomegranate and flat leaf parsley and serve.  

A feast for the eyes and mouth.  Bon appetit!
